NOTE ABOUT COOKING AT HIGH ALTITUDE:
We're at about 4,500 feet and I always have problems with my breads/brownies/cakes sinking in the center. If you're also at a high altitude, reduce the baking powder or baking soda by 1/4 tsp or so, increase baking temperature by 15 degrees and shorten cooking time by 10 minutes or more. This seems to fix the problem.


MAKE YOUR OWN TACO SEASONING:
Double or triple this and store in an airtight container so you have more next time: 1 Tbsp. Chili Pwder, 1/4 tsp. Garlic Powder, 1/4 tsp. Onion Powder, 1/4 tsp. Crushed Red Pepper Flakes, 1/4 tsp. Dried Oregano, 1/2 tsp. Paprika, 1 1/2 tsp. Ground Cumin, 1 tsp. Salt, 1 tsp. Black Pepper).

HOW TO ROAST YOUR OWN PEPPERS:
Place whole peppers just under the broiler in your oven on foil. Roast and turn until blackened on all sides. Place in a bowl covered with plastic wrap (or a brown paper bag or a zip-lock bag) for 5 minutes. Peel off blackened skin, remove seeds and chop.
