Soups!

Here are links to some of my favorite soups. Perfect for this cooler fall weather!

Easy vegetable soup (just made this a few weeks ago and froze two batches for later)
White chili (this is on my stovetop right now!)
Creamy chicken & wild rice (so good)
Slow cooker loaded potato soup
Slow cooker Mexican chicken soup
Au gratin potato chicken chowder (make while you can still get fresh sweet corn!)
Panera Bread's creamy tomato soup
Shrimp & corn chowder with bacon (recipe 1 of that week)
Black bean soup (recipe 4 of that week)
Chicken tortilla soup (recipe 4 of that week)
Chicken & corn chowder (recipe 3 of that week)

Side note: You MUST make these soft garlic rolls with your soup. Delicious.

How to use this blog

You will find ONE FULL YEAR (plus more, as I continue to add) of weeknight meals. Earlier posts contain an organized shopping list. You will also occasionally find extra recipes - breads, desserts, breakfast items, etc. - that will be posted separately from the meals. Recipes are seasonal so look back a year or two ago to see what I was posting in that same month!

I'm in the process of going back and indexing earlier recipes. I used to post all 5 recipes in one post but this prevented me from adding search terms (chicken, freezer, etc.) to each recipe. Feel free to look in the archive or use the search box to find what you're looking for.

Print out the recipes do your shopping over the weekend to have stress-free healthy meals on the table each night of the week! Read the NOTES at the beginning of each recipe for make-ahead and prep tips.

For earlier posts that have corresponding shopping lists: After each item on the shopping list you will find a number in parenthesis. This refers to the number of the meal. This way, if you do not want to make something off the menu, you can easily cross out those items on the list. You may want to make all five or just one or two that sound especially good to you...either way, you will be able to easily find the items you want on the shopping list!

Amounts of spices, salt, pepper, garlic, etc. are approximate. Vary these items according to your family's tastes and taste-test the meal along the way, adding more of something as necessary.
Most of my recipes come from my recipe collection and recipes I have found online. They are not gourmet meals...just healthy dishes you can easily prepare in about 30-45 minutes. Please feel free to comment on the meals and give suggestions on how to make them better or how you modified them to suit your family's tastes. I hope you enjoy the recipes and that this blog helps to make getting a meal on the table less stressful!
